Alu Dum - Ingredients:

Potatoes 1 kg
Curds  litre.
Salt 1 tsp

For Ground Masala.
Coriander 2 tbsp.
Chillies to taste
Jeera 2 tbsp.
Ginger 1 piece.

For powdered  masala
Jeera 1 tsp.
Cardamom 5 -6
Cinnamon stick 2 pieces

Alu Dum - Directions:
  1. Roast masal ingredients without oil.Powder and keep separate.

  2. Select small potatoes ,boil and peel.

  3. Take half quantity of oil and deep fry potatoes till they are reddish brown in colour.Remove from fire.

  4. Add rest of ol and ground masala and fry.

  5. Add fried potatoes and salt.

  6. Fry for two minutes without water.

  7. Add curds and keep on low fire till it thickens.

  8. Add sugar.

  9. After removing from fire add powdered masala just before serving
