Aviyal - Ingredients:

White gourd  100g
Pumpkin  100g
Elephant yam  100g
Raw banana  1 no
Potato  1 no
Drumstick  2 nos
Carrot   1 no
Coconut grated 1 1/2 cup
Green chillies 6 nos
Turmeric powder  1 tsp
Slight soured curd  1/2 cup
Red chilly powder  1 tsp
Coconut oil  2 tbsp
Salt  As reqd
Aviyal - Directions:
  1. cut and wash vegetables from white gourd to carrot. Please cut the vegetables into long and thin pieces. Boil this in cooker with sufficient quantity of water. Add turmeric powder, red chilly powder and salt.

  2. Crush the grated coconut and green chillies with water and mix the ground item with the boiled vegetables and cook for a few minutes.

  3. Add curd to this mixture and when foam comes immediately stop cooking and care should be taken not to boil after adding curd.

  4. Add curry leaves and coconut oil to the mixture.

  5. Serve with rice along with sambar
