Rice 1 cup.
Coconut 1 small.
Urad dal 1 tsp.
Dry red chilli 3
Green chilli 3
Cashew nuts 15.
Oil 6 tsp.
Ghee 2 tsp.
Curry leaves a few.
Asafoetida a small pinch
Salt to taste.
Coconut Rice - Directions:
Soak,wash and drain urad dal.
Scrape coconut.
Chop cashew nuts in halves and red chillies into 2 or 3 slits.
Chop green chilies to 5-6 bits.
Pour ghee and oil in a kadai(wok) and season mustard with red chillies,asafetida .Add cashews to it.
When it turns golden brown add urad dal and fry till it is dry.
Add coconut scrapings and fry till it is light brown in colour.
Add curry leaves finally.
Add this to cooked rice and salt and add salt and mix well.
Serve with raitas and pickles.
