Dosa - Dosa is a thin crispy rice crepes made from a fermented batter of rice and lentils mixed together.Dosa is believed to have its origin in Udupi of Karnataka state.It is a frequently used breakfast dish in most South Indian homes.Various variery of dosa is prepared now a days.Its prepared using rice and urad dal as its major contents.. Dosa taste good when served with traditional side like sambhar, chutney .

Dosa - Ingredients:

Parboiled rice rice 2 cup
Black gram (ulundu) cup
Fenugreek seeds 1 tsp
Cooked rice 1 tsp
Oil 1 tsp
Salt 2 tsp

Dosa - Directions:
  1. Soak rice and black gram (add fenugreek seeds in black gram) separately in just enough water for 5 hours.

  2. First grind black gram (ulundu) to a very fine flour.

  3. Drain the water in rice and grind it coarsely along with the cooked rice.

  4. Then mix it with urad batter along with salt.

  5. Keep the batter for atleast 6 hours allowing it to ferment.

  6. Once when the fermentation is over, this is when u see the batter rise about double the quantity

  7. Now mix well .

  8. Heat tava. smear a little oil in tava. (If u use non stick tava we can avoid putting oil).

  9. Pour a laddle full of batter and spread continuously and quickly in spiral motion.

  10. Fry for 1-2 minute and turn dosa and fry it for another few minutes until the dosa becomes golden brown.

  11. Remove from heat.

  12. Repeat the same procedure with the remaining batter.

  13. Serve dosa hot with sambar or chutney
