Sambar - Sambar is a very popular side dish in South India which is believed to have its origin in 18th century. Each places have their own style of sambar preparation.The taste depends on the variety of spices we use while preparing it. It is an inseparable dish for all festive occasion .Sambar is prepared using the lenthil thur dal together with a wide varieties of vegetables and spices. It is usually served with rice and breakfast dishes like idli,dosa, vada etc….









I used to include Sambar in my menu atleast once in a week with rice,dosa or idli.

Sambar - Ingredients:

Red gram (soak for at least 1 hour) 1 cup
Onion (cut lengthwise) 1 no
Choice of vegies (carrots,
radish,drumstick,beans,okra,brinjal)) 1 cup
Tomato 2 nos
Green chilli 1 no
Garlic 3 clove
Tamarind juice (or thick store bought pulp 1/4 tsp) 3 tsp
Red chilli powder 3 tsp
Corriander powder 2 tsp
Turmeric powder ¼ tsp
Sambar powder (store bought gives good color) 2 tsp
Salt (or to taste) 2 tsp
Oil 2 tbsp
Mustard ½ tsp
Cumin seeds ½ tsp
Fenugreek seeds ¼ tsp
Dry red chilli 2 nos
Asafoetida powder ½ tsp
Curry leaves 7 nos
Water 3 cup
Corriander leaves (chopped for garnishing) 1 stks

Sambar - Directions:
  1. Soak Thur dhal in water for atleast 1 hour. Then pressure cook it with little salt and turmeric powder until you get 3 to 4 whistles . Once done and when the pressure releases, open and mash it to smooth paste and keep aside.

  2. Take a deep vessel cook chopped vegetable except lady's finger(okra)with salt.Add the mashed dal after 5 mins.Let it cook nicely.(If cooked in low heat it will taste better than as in pressure cooker).Fry okra in apan and keep it aside.

  3. Add red chilli powder,Coriander powder, asafoetida.Add sambar powder.add fried okra.

  4. When it boils add tamarind pulp.

  5. Season mustard with onions chopped,curry leaves,red chilly.

  6. Add this to the prepared sambar.

  7. Garnish with coriander leaves which will give nice aroma.

  8. Serve hot with dosa, idli or rice.
