Sardines (Mathi) Curry - Ingredients:

Sardines  30
Coriander Powder  2 tsp
Chilli Powder  2 tsp
Pepper    tsp
Cummin seeds    tsp
Garlic  10 cloves
Ginger  1 small piece
Mustard    tsp
Turmeric 1 piece
Onion, finely sliced  1 cup
Green chillies 6
Grated Coconut   cup
Coconut oil  2 tsp
Vinegar 1 tsp
Curry leaves a few 
Sardines (Mathi) Curry - Directions:
  1. Grind Coriander, Cumin seed, Pepper, Garlic, Ginger, Mustard and Turmeric together and the coconut separately.

  2. Place a Pan on fire, heat the oil and fry a little of the finely sliced onions, and then add the Ground masala and saute.

  3. Add the remaining onions, curry leaves and green chillies and saute again.

  4. Put in the cleaned fish with vinegar and salt to taste.

  5. Mix well, cover the pan and allow it to simmer till cooked.

  6. Open the lid and add the ground coconut mixed to thick consistency with water.

  7. Serve hot with rice.
