Soya Bean Curry - Ingredients:

Soyabean chunks 50 gms 
thinly sliced Onions 3
thinly sliced Tomatoes 3
Green chillies 4 
Ginger crushed
Turmeric powder 1/4 tsp 
Coriander powder 2 tsp 
Bay leaves (Tejpatta) 2 
crushed Cinnamon sticks 1 
black cardamom 1 
Garam masala powder 1/2 tsp 
Kasoori methi(Dry methi leaves) 1/2 tsp 
Salt to taste
water 3 cups  
Oil 3 tbsp 
Soya Bean Curry - Directions:
  1. In a medium pan boil 2 cups of water with 1/2 tsp of salt. When water is boiling add soya chunks and half cover the pan. Youll see soya chunks gets double in size.

  2. Take the pan off the fire and drain the water.

  3. Squeeze the soya chunks to drain the water from it.

  4. Take a kadai and put some oil into it. When the oil is hot, add cumin seeds and bay leaf.

  5. When the cumin seeds starts spluttering add sliced onion and fry them on medium flame till golden brown.

  6. Add sliced tomato, salt and haldi powder and mix well and cover over low heat for 5-7 minutes, stirring in between.

  7. In the meanwhile take a bowl and add ginger paste, coriander powder, red chilli powder, crushed cinnamon stick and badi elachi(cardamom) and mix all the ingredients with little water.

  8. Now add all the mixed contents of the bowl and soyabean into the pan and fry, stirring constantly on medium flame, for about 8-10 min, or, until paste turns a light brown color and the oil gets separated.

  9. Now add potato, kitchen king and garam masala and stir for about 5-6 minutes.

  10. Add some water, checking the consistency to ensure that it is not too watery and cook for 10 minutes on medium flame.

  11. Add Kasoori methi and garnish it with coriander leaves.

  12. Serve hot with naan or jeera rice.
