Spinach finely chopped 1 cup
Egg 4 nos
Onion 1 big finely chopped
Tomato 1 finely chopped
salt to taste
Grated Cococnut 1/2 cup
Green chilli 1
Salt to taste.

Mustard Seed 1/2 tsp
Spinach Egg Fry - Directions:
1. Cook Spinach in closed vessel in low flame (when cooked it should be dry. if neede spinkle little water while cooking).
2. Add Salt.keep it aside.
3. Crush grated coconut together with green chilli.
4.In a kadai add oil and season with mustard and curry leaves.
5.Fry chopped onion. when turned brown add tomato and fry it for 2 mins.
5.Add egg to it and scamble it by adding salt.
6. To this add the crushed coconut and cooked spinach.
7. Serve hot as side dish with Rice or Roti.
